    I really like sauerkraut, in the past I appreciated other fermented vegetables in macrobiotics restaurants. Recently I found a reference to kimchi, a korean fermented recipe, in the book "The good gut" by Stanford University researchers. And I decided to try to make kimchi. I followed the indications in the recipe here and I have to say that I am satisfied of the results. I like a lot kimchi. And what about you? Do you eat kimchi or other fermented foods in your diet?

What happens if the body can't absorb the iron from diet? I am asking about the relationship between serum iron and ferritin. In March I had serum iron at 134 mcg/dL, ferritin at 71.30 mcg/dL (and B12 very low 79 mcg/dL) , now at the latest analysis serum iron is 209 mcg/dL and ferritin is 96.60 mcg/dL and because I am supplementing B12 is 156. I am wondering what mean this so high serum iron. Could it come from food containing iron that I can not absorb? In the last months the only foods, containing much iron I introduced as new, was pistachios and dark chocolate. I also, as some of you, drink about 1 L/day of green tea, that should limit a lot iron absorption. I still have to show this data to my doctor. Thanks!

    I have read that book too and i liked it, but the title isn't a little misleading? From a scientific point of view is not proprerly correct saying that some foods can improve immunity. The proof on human beings I think are still non conclusive.

The higher the rate of proliferation, the greater the risk of mutations that develop into cancer. How can we reduce the risk of random mutations? By lowering the rate of cell proliferation! How can we lower the rate of cell proliferation? By reducing calorie intake and performing regular endurance exercise (both together), which in turn reduce levels of growth factors (e.g. insulin, IGF1, testosterone, estradiol, inflammatory cytokines, leptin) that accelerate cellular proliferation and the risk of random mutations! Moreover, the reduction of these growth factors with calorie restriction inhibits the insulin/IGF pathway, which through FOXO upregulates DNA repair genes. This is the reason why caloric restriction in animal models is the most powerful intervention in preventing cancer! MEDITATE AND TAKE ACTION!

    Hello Mechanism, sorry for my late replying to your kind email. I have not so much time unfortunately. My nickname comes from my interest in zen where often there is a reference to 'cloud'. a term used to name monk is 'unsui', literaly cloud-water. I don't remember how I did find the dr.Klapper video, but is the best thing on fasting I found. he and Dr.Goldhamer work at the same center and they have a lot of experience on fastings. Luigi Fontana group has started a collaboration with them to collect their data on fasting to be analized. all the best!Cloud

    HIIT book recommendations

    Trump is a good example of world turned upside down.... Fontana told that he is working on the english edition, but it will take time (I had the impression that he is translating the book personally). The Longo's book was written in English by him and translated in Italian by a translator, I think that the english edition will be pubblished soon, Anyway I think that most of the people here know and practise most of the content of the books. but they can be important and relevant for the majority of other people.

    HIIT book recommendations

    Just a few days ago Luigi fontana published a great book named "la grande via" , in it He analyze 1) nutritions 2) exercises ( also HIT training and yoga and tai chi) 3) meditation , especially mindfullness. There are also a chapter about nutrition for children and another on ecology and impact of our choices on the world. Really great view . I appreciate his intention more than Longo's.

    I tried recently to follow an IF of 16:8 type, skipping breakfast. I did for about 10 days, at the end I got used but 1) I noticed that I eat more in lunch and dinner and was more difficult to control the consumption of fruit 2) I was not able to continue to do the weekly fasting of 36 hours I do usually. So I decided to stick to my usual plan of eating three times a day and having one a week 36 hours fasting. very interesting the information about possible conflicts between tea and anti oxidants. In the FMD by Longo I noticed the use of hibiscus tea, but in some part hte information is contradictory, because I read also that he suggested to not drink coffee etc. I use to take curcuma pills in low doses, maybe I will dismiss the use of it before and during fasting. thank you.

    Sleep thought of the day

    I have a question about hormesis. It is a concept proposed by Mattson and we think that it is one of the cause of benefits of Exercise, Fasting,Cold exposure, Caloric restriction, etc. But I wonder how much it has been verified experimentally, like for example the autophagy, it could be that hormesis is a very nice principle but nevertheless not explaining everything.... what do you think?

    I have to say that the week following the FMD diet days I have more difficulty to limit what I eat, especially dark chocolate and fruits... Mccoy, I plan to follow FMD diet only three times a year, the rest of time I do a 32 hours of water fasting a week. all the best, Cloud

    I think the version can be defined official, since it appears on Longo's own book. He just describes the types of acceptable foods, quantities, macronutrients ratios, calories. Other details I got from the patent submission. Cronometer is indeed a great help to reach the target calories and ratios. It would be very time consuming otherwise. The PROLON version is simply the ready package. I don't know exactly what's in there. Thanks mccoy, I will give a look at your crometer settings, taking advantage of the school holidays last week I have also completed (the third time) one FMD cycle. I have used an excel file and every evening I calculated the right proportion of, essentially, my ingredients were: steamed vegetables, nuts, olive oil, soups . I used to eat in three meals. I have to say that the process is time consuming but also instructive. This time the experience has been better than previously but I think I could not follow a cycle while working, especially if you have also to cook. I have found a food combination very fast to prepare that is very near to the macronutrients ratios specified by Longo's work: two vegetables soups organic ready from supermarket (about 4€ each , 620 ml), 20 g of olive oil, 4 cakes of brown rice (Also, for the palate! ). A little boring for 5 days, but next time I will try with this, avoiding so to cook anything. This lecture is cited in the Longo's book, but is available only recently: I think it is interesting. all the best, Cloud
  19. Longo in the book remarks the importance of genetics for centenarians...if I remember rightly He makes the example of monkeys, they have a slightly different set of genes, and even if they would follow a 'perfect' diet and physical exercises they could never live more than 50 years...

    Hello Dean I am so sorry for you in USA but also for us here. In Italy we had Berlusconi for many years and Trump appear to me very similar. The incomprehensible thing for me is that Trump comes after 8 years of Obama. I have listened to Obama'speech about transition: <<.... “Sometimes you lose an argument, sometimes you lose an election,” he said. “But the path this country has taken has never been a straight line. We zig and zag.”...>> He is really a great man and we all on the world will miss him. But I have to say that also Trump at the end will finish, just like Berlusconi.... Even If many people will suffer more at the end and for example also my job as teacher will be more difficult, to educate students to the value of democracy and science when people like Trump governs the most important country. I think you know the "Heart Sutra" of Buddism.     I have just finished to read this very nice and enjoyable book, that reports the research of Satchin Panda and Mattson. The title is : Buddha's Diet: The Ancient Art of Losing Weight Without Losing Your Mind https://www.amazon.com/Buddhas-Diet-Ancient-Losing-Without/dp/0762460466 As zen practioner I have find also the buddist part interesting and accurate and the title with that "not losing your Mind" is terrific! :-)

    Valter Longo interviewed by Rhonda

    Mccoy thanks for the accurate report of Longo's book! I also find it an interesting book. I appreciated the biographical part and in particular the "five pillars" that any diet for longevity have to satisfy to be reliable: 1) basic research on nutrients and simple organisms 2) epidemiology 3) clinical studies 4) centenarian studies 5) study of complex systems Two or three points aroused my attention: 1) he suggests to take every 3 days a multimineral supplement and omega 3 supplement. He says that this should be a good compromise, if high doses of supplement have been demostrated not useful, a deficiency could cause problems 2) He proposes -but only as hypothesis - that it is better to eat the food eaten by our ancestors...some people could develop intollerance to food like qinoa and curcuma (he made these two example) The other thing I find interesting is that then the diet is applied and adapted for various illnesses (cancer, diabetes, Alzheimer, etc.). Regarding the Italian edition before english edition: what I know is that he wrote the book in English (maybe after so many years in USA he speaks and writes better in English...and doctors that reviewed the text were mostly not Italian...)

I think that in a few months will be delivered also an English version, Longo wrote the text in English and the Italian publisher translated it.
