Coconut Oil vs. Safflower Oil

Some people believe coconut oil to be a desirable kind of fat to consume, despite its huge saturated fat content. 


This paper is kind of interesting.  It compares the effects of two small meals, identical except for the type of fat used.


It seems the coconut oil - nearly 100% saturated - performed poorly compared with the safflower oil.  This will be of no surprise to some of us, but likely disappointing to others.
