mccoy
More variations of the same big bowl of mixed salad: this time avocados and chickpeas added. Summertime is great for fresh salads.

mccoy
Drewab, we probably all agree that summertime is for salads, wintertime for soups! But I also enjoy cooked vegetables in the summer, I just have to wait they cool down. This has been today's colorful cooked serving, red cabbage, tomatoes and leeks, exceedingly tasty! I had to exercise self-control not to eat an inordinate amount.
mccoy
Another tasty dish of vegetables (purple cauliflower, peppers, tomatoes, onions), eating vast amounts of'em presently.
mccoy
Yesterday I loved this simple, minimalistic but chromatically appealing dish: yellow cauliflowers and raw tomatoes. The picture may not make justice to the real colors, yellow and red, in a strangely appeasing combination.

mccoy
I like some chromatic tricks when eating. This recipe is called 'Black & White': black of black beans, which make the dish crunchy, and white of cauliflowers, with a sprinkle of green parsley which makes the color contrast milder. Gordo
That may look like chicken but it's "chicken of the woods"! If I misidentified it, this may be my last post 😉

Ron Put
Just soaking a beautiful white fungus that I bought dried. I have loved wood-ear mushrooms for a few years now, but just recently discovered white fungus. I just soak it and eat it raw as an appetizer or a snack. I find it delicious. Thanks Ron, but here Asian markets are founds only in big cities, like Rome, Milan, or maybe where there are Chinese communities, like Prato in Tuscany. I'll ask around anyway, very curious about that mushroom!

I am currently in Asia for a couple of weeks, here is what I bought today from the local health market: Black fungus (wood-ear) and white fungus 🙂
mccoy
Ron, thanks for the amazon suggestion, they only offer this product, which maybe is the same mushroom
mccoy
This is a FMD meal (used for Valter Longo's fast-mimicking diet): 300 gr steamed red cabbage, 200 gr raw tomato, 1 tbsp EVOO, salt, pepper and oregano. As a dessert, one tbsp peanut butter and 4 cashew nuts, a total of 375 kcals, which constitutes about one half of the daily energy allowance of days 2 to 5 of the FMD. mccoy
This was yesterday's FMD dinner, green peppers plus tomato. Similar to lunch And this is today's FMD lunch, green cabbage and tomato (+EVOO), plus a tbsp of peanut butter. All at about 350 kcal, it is just enough to fill up a body where ketones substituted carbs, but it solicits a fasting signal which triggers autophagy and other beneficial mechanisms. Even though I don't agree with everything he says, I consider Valter Longo worth of a Nobel Prize just for this intuition of the FMD. mccoy
I just love this chain of self-service restaurants, cafeteria style, located in a mall. They have a wide choice of vegetables and plant-based foods and sometimes I have lunch there with the family on weekends.
