AFAIR the levels of aminoacids in the blood reflects only the last day protein intake and nothing more (this is also the reason there is no studies with thousands of involved - the mechanics of such experiment and the volatility of the data makes too little sense to invest in it, even for "eat more protein" sponsors), they can not serve as even a weak proxy for glutathione status assesment. In EU it is not uncommon for commercial labs to do gsh/gssg test in the rbc walls and IMHO it is the best way to go. I posted my values here From all I read on the topic I think the optimal value is to have it higher that lab norm but not too high, let's say 5-10% or something like this. Why? Because of antiox networks orchestration (I am following the way of thinking demonstrated by Nick Lane due because there could be probably no certain answers on questions of optimal state of so highly complicated thing) and quantitative thinking about chemical reactions it is involved (it can dempfer things in a few % of "corner cases" but will not save from catastrophic cell events, given we have no idea how good/bad is to have it very high it is better not to do it). Regarding strange glutamate levels - AFAIR glutamate participates in some important other pathway and this could be the reason - it is homeostatically regulated and if intake is lower then more glutamate will "exit" that one of the pathways to feed the most crucial one.
