Nopalitos/prickly pears: are they healthy? Is it possible to overeat? Sourcing?

I've been eating massive amounts of them from the mission lately, and have some degree of liquid stool (not *bad* or uncontrollably or to the level of causing any incidents).

I don't peel the outer layer of prickly pears before eating. The spikes don't cause pain but I wonder if they're causing the liquid stool. I generally want to invest the least amount of time/effort to eating, so I don't like peeling [that said they are RICh in dragonfruit-like antioxidants even though I know dragonfruits spike my glucose like crazy)(
